We’ve all been there: it’s 5 p.m., it’s been a long day, you’re starving, and the thought of spending an hour in the kitchen feels like the most daunting task of all. 

And what’s worse is when you still have to figure out what you’re going to make! 

Don’t even get me started on that.

Enter: 30-minute meals—the superheroes of the dinner world. 

Weeknight dinners don’t have to be a drag! I’ve got a ton of minimal effort, quick cook time, easy weeknight dinner recipes all over Little Spice Jar and today I want to put them all in one place for you.

There’s no need to dial for takeout – we can get amazing easy dinner recipes ready straight from your pantry and refrigerator. Think turning chickpeas in chana masala, a pound of ground beef into Gochujang beef bowls, and tacos – quicker than ordering take out!

That way they can figure out what they want to eat, or better yet, perhaps they can take on kitchen duties for an evening or two when you’ve got the recipe all ready to go!

Take Out Fake Out

  • Sticky Garlic Gochujang Chicken – one of the most popular recipes on the blog! Start with a pound of chicken breasts and a sweet, sticky and delicious gochujang sauce! Serve with fluffy rice right out of your rice cooker.
  • Thai Basil Fried Rice – Got leftover rice? This is the perfect way to ue it up! Start with some peeled and deveined shrimp, a handful of Thai Basil, and of course, lots of garlic! The trifecta for a flavor-packed dinner!
  • Lomo Saltado  – start with thinly sliced steak, that we’ll stir-fry it with onions and tomatoes. Toss with or without French fries. I can’t think of a better way to eat steak and potatoes together!
  • Black Pepper Chicken Stir Fry – humble ingredients but it’s definitely full of flavor! Just what an easy dinner recipe should be. Grab some chicken out of the freezer, you’ll also need some bell peppers, onions and celery! You should be able to find everything else in your fridge or pantry!
  • Weeknight Chana Masala – the best way to use up a couple cans of garbanzo beans. The Chana Masala is warming and some yogurt raita just cools off the palette. Serve over fluffy basmati rice.
  • Salmon Sushi Bowls – This one is a staple in my house! Cook up some salmon in the air fryer while the rice cooker makes you some rice. Then toss it together with tender sliced cucumbers, carrots, and pickled ginger! YUM!
  • Gochujang Beef Bowls with Korean Cucumber Salad – layers and layers of flavor here. The ground beef is sweet and spicy while the cucumber salad is crunchy and fresh. The fluffy white rice brings this whole thing together in a flash!
  • Sizzling Jalapeno Chicken – Start by dusting the chicken and pan-frying it until it’s crispy, then toss it with fresh jalapenos in a brown sauce! And you guessed it – the rice cooker has your fluffy rice ready to go!

Stove Top Recipes:

  • Marry Me Chicken – Pan-seared chicken breasts or thighs in a creamy parmesan sun-dried tomato garlic sauce! Finally, top with fresh basil, serve with fluffy white rice and a lettuce-based house salad.
  • Cozy Ground Beef Orzo – A one skillet dinner that will please the whole family! Brown the ground meat in a pan, then season and and broth and orzo!m It’s warming and so flavorful!
  • Shrimp in Saffron Butter Sauce – A simple shrimp recipe that has less than 10 ingredients! The saffron sauce is delicious with some crusty bread!
  • Cheesy Cheddar Broccoli Pasta – the perfect side or the main dish for any meal! Make cheddar cheese sauce, then toss with al dente shells and broccoli florets. It is glorious!
  • Chili Crisp Salmon with Sweet Pepper Salad – Pan-fry tender salmon, then top with sauce made with garlic, soy sauce, toasted sesame oil, and chili crisp. It’s seven ingredients that pack a flavorful punch. 
  • Saucy Lemon Cilantro Chicken – Tender seasoned chicken breasts in the most delicious creamy sauce. Season the chicken generously, then saute it in a pan with mushrooms and make a quick and easy pan sauce! 
  • Lazy Ravioli Skillet Lasagna – Not your mom’s lasagna! Skip boiling the noodles separately and dirtying a bunch of dishes. This one-pot lasagna combines and cooks everything in one pot. Bonus: prep time takes like 5 minutes.
  • Fiesta Creamy Corn Chicken – The chicken is seasoned with lots of seasonings and pan-seared. Then we’ll make the creamed corn with peppers, onions, two kinds of cheeses, a splash of heavy cream, and lots of lime juice! All you need is some rice on the side!
  • Pasta Puttanesca – Pasta Puttanesca is a spicy tomato-based Italian dish made with aromatic garlic, olive oil, anchovies, olives, and capers. This classic Italian dish has so many beautiful flavors and it’s easy to make for a quick dinner.
  • Chipotle Chicken with Corn Salsa – This recipe combines sweet, spicy, and smoky flavors to create a seriously flavorful chicken bowl.
  • Mexican Street Corn Tacos – It’s when esquites or street corn salad meets tacos! These chipotle chicken tacos are loaded up with a simple roasted corn and topped with chipotle mayo.
  • Shrimp Burgers with Jalapeno Lime Slaw – pan fry the shrimp patties then top with the yummiest jalapeño lime slaw or load it up on brioche buns.

  • Cheesy Rice and Black Bean Enchilada Soup – it’s hard to get enchiladas on the table in 30 minutes – but enchilada soup is quick and easy! Add bean, rice, enchilada sauce and a few other ingredients, and presto. Plus, only one pot to clean!
