- 1 1/2 cups of apples diced (such as fuji, pink lady, or granny smith)
- 2 teaspoons lemon juice
- 2 tablespoons brown sugar
- 1/4 teaspoon vanilla extract
- 1 teaspoon cinnamon divided
- 3 tablespoons granulated sugar
- 6 ounces goat cheese chèvre, room temperature
- 1 puff pastry sheet 10 x 15, thawed
- 2 tablespoons salted butter melted
In a medium frying pan over medium heat, cook the apples along with the brown sugar, lemon juice, and 1/2 teaspoon of cinnamon for 4-6 minutes until the liquid is absorbed. Remove from heat; add in the vanilla extract. Let cool completely. In a small bowl, mix the remaining cinnamon with the granulated sugar and set aside.
Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper or a silicone mat.
Unroll the puff pastry sheet on a lightly floured work surface. Brush the pastry with 1 tablespoon of the melted butter. Spread the goat cheese on top using a knife. This will take time and patience. You can also just crumble and disperse the goat cheese evenly all over the surface. Sprinkle half of the cinnamon sugar mixture over the goat cheese. Spread the apple mixture evenly on top.
Starting at one of the long ends, roll the pastry up as tightly as possible. Brush with the remaining melted butter and sprinkle with the remaining cinnamon sugar mixture.Wrap the puff pastry in parchment or wax paper and allow to cool in the refrigerator for 10 minutes (see note). Using dental floss or a very sharp knife cut the puff pastry into 1/2 inch thick slices.
Place the swirls on prepared baking sheet and bake for 13-16 minutes or until the cheese is bubbly and the pastry is golden in color. Allow to sit on the baking sheet for a few minutes before serving.
- Instead of leaving in the refrigerator for just 10 minutes, these can be made up to 8 hours in advance. Allow the puff pastry to come to room temperature for 10 minutes before slicing and baking.
