Best Homemade Italian Dressing

An easy homemade Italian dressing that you can make any time! Italian vinaigrette uses mostly pantry staple ingredients and it tastes so much better than store-bought dressing!

Ingredients

  • ¼ cup white wine vinegar
  • 3 tablespoons grated Pecorino Romano or parmesan
  • 2 tablespoon mayonnaise
  • 2-4 teaspoons cane sugar plus more to taste
  • 2 teaspoons lemon juice
  • 1 teaspoon dijon mustard
  • ½ teaspoon Italian seasoning
  • ½ teaspoon dried oregano
  • ½ teaspoon dried parsley
  • ½ teaspoon dried basil
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon black pepper
  • ½ cup extra virgin olive oil

Instructions

  • ADD: In a medium bowl, add the white wine vinegar, pecorino, mayo, 2 teaspoons of sugar, lemon juice, dijon, italian seasoning, oregano, parsley, baasil, garlic powder, kosher salt, red pepepr flakes, and black pepper.
  • COMBINE: using a whisk. When mixed, slowly stream in the olive oil with one hand while you whisk with the other hand until the dressing comes together and is smooth.
  • TASTE: Taste the dressing using a leaf of lettuce or an ingedient from the salad you'll serve this with. Adjust with more sugar as needed.
  • SERVE: Pour the dressing into a container and use immediately on your favorite homemade salad or refrigerate for up to two weeks! I love using it on a house salad or my italian pasta salad.
  • *update 12/25: since making this recipe many more times, I've realized that many if not most shelf-stable mayos contain sugar, which leads some readers to find the amount of sugar in this recipe to be a bit much.. For this reason, I've adjusted the amount of sugar used. The original recipe called for 1½ tablespoons.
