Cozy Ground Beef Orzo

The coziest dinner recipe! This Ground Beef Orzo dish is one that I find myself making over and over again. It's warming, flavorful, and so easy to make!

Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 ¼ cup yellow onion chopped
  • 6 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon umami seasoning for umami, or use soy sauce
  • ½ teaspoon garlic powder
  • 1 teaspoon Calabrian chili paste or ½ teaspoon red pepper flakes
  • 14.5 ounce can fire roasted tomatoes
  • 1 cup beef broth
  • 1 cup dry orzo
  • ½ cup grated parmesan cheese
  • 3 tablespoons heavy cream
  • 2 handfuls baby spinach

Instructions

  • CRUMBLE: Add the olive oil to a 3 quart dutch oven or larger over medium high heat. When hot, add the ground beef, cook and crumble with a spoon. Stir frequently until the beef is done, about 5-6 minutes.
  • ADD AROMATICS: Add the chopped onions and cook for another 5-6 minutes or until the onions soften and turn translucent. Add the minced garlic and let cook for 1 minute.
  • SEASON: season with Italian seasoning, mushroom powder, garlic powder, and Calabrian chili paste.
  • SIMMER: Add the fire roasted tomatoes, beef broth, orzo, kick the heat up high, and bring to a simmer. Then, cover with a lid and drop the temperature to medium-low and let it cook for 8 minutes.
  • FINISH: Remove the lid, add the parmesan cheese, heavy cream and baby spinach. Stir to combine. Taste and adjust with kosher salt and black pepper as needed. Serve warm in bowls topped with more parmesan.

Notes

  • Storage: Leftovers can be stored in an airtight container for up to 4 days.
