Ingredients

Apple Fritters:

  • 1 ½ cups all purpose flour
  • 2 ½ teaspoons baking powder
  • 2 tablespoon granulated sugar
  • ½ teaspoon EACH kosher salt AND pie spice pumpkin or apple
  • 1 teaspoon EACH: ground cinnamon AND vanilla extract
  • 2 large eggs beaten
  • 2 tablespoons melted butter
  • cup buttermilk
  • 2 large Honeycrisp apples peeled and diced (~ 3 ¼ cups)
  • Oil for frying

Maple Glaze:

  • 2 ¼ cup powdered sugar
  • teaspoon kosher salt plus a dash of pie spice, optional
  • 1 tablespoon maple syrup
  • 3-4 tablespoons milk

Instructions

  • PREP: Heat the oil in a medium pot to 360ºF. Use a candy thermometer to make sure the oil stays at this temperature by increasing or decreasing the heat as needed once the oil is hot. While the oil is heating, make the batter.
  • MIX: In a large bowl, whisk together the flour, baking powder, sugar, salt, cinnamon, and pie spice. Then, add beaten eggs, vanilla, melted butter, and buttermilk. Stir in the apples until combined spread throughout the batter.
  • FRY: Once the oil is hot, drop the batter into the fryer using a 1 ½ tablespoon cookie scoop. Fry in small batches so the oil doesn’t drop in temperature too much. These will take you roughly 3-4 minutes depending on the size. When golden and cooked, remove from oil using a slotted spoon onto a paper towel-lined baking sheet. Let cool before glazing.
  • GLAZE: Combine powdered sugar, salt, and pie spice (if using) in a medium bowl. Add the maple syrup and milk and whisk to combine. If the glaze is thick, add another small splash of milk until it just clings to the back of the spoon. Dip the fritters in glaze one at a time and place on parchment-lined baking sheet. Serve warm!
