TOSS: Preheat the air fryer to 425ºF. You can also make these in an oven at 450ºF. In a bowl, combine sweet potatoes with oil, cinnamon, garlic powder, chipotle chili powder, kosher salt, and black pepper. Toss to coat evenly then spread in a single layer on a baking sheet or the air fryer basket.
AIR FRYER OR BAKE: Place in the oven or air fryer to cook for 18-23 minutes. Give them a good toss around the halfway mark.
GROUND BEEF: Brown the ground beef over medium-high heat. Crumble the beef as you go to make small pieces. Once browned, drain any excess grease, especially if you use less lean ground beef. Then add the taco seasoning along with ⅓ cup water. Cook and simmer the meat for 2-3 minutes or until the water and seasonings create a thick sauce that clings to the beef, remove from heat.
ASSEMBLE: Add the prepared sweet potatoes to each bowl, and divide the ground beef out amongst the bowl. Add ⅓ cup cottage cheese to each bowl, and half of an avocado. Drizzle with hot honey BBQ sauce and serve with pickled jalapeños or onions as desired.
