The Easiest Grilled Chimichurri Chicken
The BEST and EASIEST 2 ingredient grilled chimichurri chicken. We're marinating the chicken breasts in prepared chimichurri sauce and grilling it up! So flavorful and hardly any work at all!

Season both sides of the chicken breasts with salt and pepper. Add the chimichurri sauce into a quart sized zip-top bag. Add the chicken breasts, seal the bag, and give it a good squish and shake until the chimichurri sauce evenly coats the chicken breasts. Allow the chicken to marinate for 10-20 minutes.
While the chicken marinates, heat the grill. Spray a light coat of cooking spray before grilling. Remove the chicken breast from the marinade Place chicken on the grill and cook for 3-5 minutes per side. Chicken is done when browned on the outside, firm to the touch or registers 160ºF. Let chicken cool for 3-5 minutes before serving. Sprinkle with fresh parsley and serve.
- I do not suggest marinating the chicken for more than 20 minutes because chimichurri sauce contains red wine vinegar which will break down the chicken pretty quickly.
- You can also grill the chicken indoors on a grill pan or a cast-iron skillet. Cooking time will vary slightly, just keep an eye on it and feel for firmness.
- If you are grilling chimichurri chicken for a large crowd, remember you need about ¼ cup of chimichurri sauce for every 2 chicken breasts.
