There an air fryer-friendly snack/ side dish that uses pantry staple ingredients in town that we’re obsessed with.

Air fry your potato wedges!

The texture is pillowy soft on the inside and the outside has the most delicious seasoning mix that clings to its crisp exterior. No soaking or removing the peels so it takes minimal time to make.

Simply cut them lengthwise into large wedges, season generously before you toss them in the air fryer basket, and let them roast up into golden little nuggets of perfection. Bonus points: they’re gluten-free.

Just make sure to have plenty of sauces like ketchup and ranch on hand for dipping!

Ingredients for Crispy Air Fryer Potato Wedges

  • Russet Potatoes: 2 pounds of russet potatoes for this recipe. Make sure to give the potatoes a good scrub and wipe down with paper towel to get rid of excess moisture. Since we’re leaving the skin when we make potato quarters, it’s important to make sure there’s no dirt left on the potatoes.
  • Avocado Oil: my high heat oil of choice. Feel free to swap this with any other high heat oil that you prefer. Olive oil works too since we’re keeping the air fryer hovering at 375 degrees F. If you make these in the oven, use a high heat oil like vegetable oil, canola, avocado, etc.
  • Cornstarch: starch clings to the potatoes and gives that these little nooks and crannies where the seasonings sticks to the surface and it’s just little bits of flavor bombs
  • Garlic Powder: I love using garlic powder for this recipe, feel free to use a dash of onion powder as well, you can even add some chili powder or paprika for color. Swap the spices as you please!
  • Adobo Seasoning: this is different than adobo sauce! The seasoning contains ingredients like salt, garlic powder, onion powder, white pepper, oregano, and turmeric. Feel free to swap it for Cajun seasoning or even add cumin to give them a smoky flavor.
  • Kosher Salt: Pretty self explanatory when it comes to potatoes!
  • Black Pepper: A go to for most recipes!

How to Make Air Fryer Potato Wedges

  1. Preheat the air fryer. It’s important to preheat so that when you add the potatoes, they start cooking immediately instead of the air fryer having to heat up first.
  2. Slice the potatoes. Give the potatoes a really good scrubbing under cold water. Once the potatoes are clean, slice into 6-8 wedges depending on the size of the potatoes.
  3. Toss them in seasoning. Grab a large bowl. Add the potato wedges then drizzle with avocado oil. Sprinkle with salt, cornstarch, garlic powder, black pepper, and adobo seasoning. Toss the bowl to coat the wedges evenly in the oil and the seasonings. Avoid tongs so that the seasoning doesn’t just cling to them. If you find the potatoes are a bit dry, you can spray a little more avocado oil (or drizzle) and toss until evenly coated.
  4. Air fry the potatoes in batches. Pop the potato wedges in as single layer in the air fryer. Doing this in batches is essential to make sure you get crispy potato wedges.
  5. Flip the potatoes halfway. Once done, check to see if the potatoes are golden on the outside and crispy. Feel free to sprinkle with fresh parsley or parmesan cheese when they’re hot out of the oven! I usually opt for parm!

FAQs about this recipe

Why soak potatoes before air frying?

It allows the potatoes to release the excess starch which then cause the potato wedges to get even more crisp in the air fryer or the oven. I find that it makes a minimal difference for the amount of time and energy it requires so I typically skip this

Can I use Yukon gold potatoes?

You can swap russet potatoes for Yukon golds but the starchy texture of russets is ideal for wedges. They may not get as crispy in the air fryer or oven!

Storage suggestions?

Store leftover air fryer potato wedges in an airtight container in the refrigerator. Reheat them on 300ºF for 4-5 minutes in a preheated air fryer or microwave.

Ingredients 

  • 2 lbs. russet potatoes
  • 2 tablespoon avocado oil
  • 2 teaspoon cornstarch
  • ¾ teaspoon garlic powder
  • ¾ teaspoon adobo seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Instructions 

  • AIR FRYER: Preheat the air fryer to 375ºF.
  • SLICE: Scrub the potatoes clean under cold running water. Then, cut the potatoes in half lengthwise. Place the cut side down, then cut the potatoes in half again, and then cut them at a 90º angle once again to make potato wedges.
  • TOSS: in a bowl, add the potato wedges and drizzle with avocado oil. Sprinkle with kosher salt, cornstarch, garlic powder, black pepper, and adobo seasoning. Toss the bowl to distribute the seasonings so that the wedges are evenly coated. Spray with oil if the potatoes seem a little dry.
  • AIR FRY: Spray the air fryer basket with cooking spray. Place the potatoes in a single layer in the air fryer basket. You might have to do this in 2-3 batches as it just depends on the size of the air fryer and how many it can hold without being over crowded. Air fry for 15 minutes.
  • FLIP: Open the air fryer gently shake to loosen and flip the potato wedges. Cook for another 5-8 minutes. Then check to see if the potatoes are golden and crispy and cooked through. If they aren’t let them for another 2-6 minutes until crispy! Feel free to sprinkle with parsley or parmesan cheese when they're hot out of the air fryer!
